Ok, bikes up and running, i think its all good there, but its popping when im off the throttle and rolling. How would i go about tuning the carbie ? any useful advice ?

carb balancers, make sure it jetted correctly, and the idle is not too low.

how does a carb balancer work, any useful sites, etc ...

carb balancer - measures vacuum at each inlet. adjusted via a screw in between the carbs so it is the same on both. again - look in the downloads section of this site. it's all in there.
also it may be worn emulsion tubes.

popping on the overrun = too rich.
Simple fix (unless your main jets are way out) is to lift the needle a notch
